Chocolate Chip Oatmeal Cookie Bars
Time: 1 hour (30 minutes active time)
Serves: 16 bars
Ingredients:
Butter, 16 tbsp
Rolled Oats, 8 oz
Flour, 1 ½ cups
Baking Powder, 1 tsp
Baking Soda, 1 tsp
Kosher Salt, 1 tsp
Granulated Sugar, ½ cup
Light Brown Sugar, ¾ cup
Vanilla Extract, 1 tsp
Semi-Sweet Chocolate Mini-Chips, 8 oz
Maldon Salt Flakes, ½ tsp
Nutella, 4 oz
Eggs, 2
Directions:
Bring butter to room temperature. Preheat oven to 350℉. Using 1 tablespoon of butter, butter a 9x13 inch baking pan.
In a medium bowl, whisk together the rolled oats, flour, baking powder, baking soda, and salt.
In a large bowl, using an electric mixer at medium speed, mix together the butter and sugars until light and fluffy, for 2 minutes. Add the eggs and vanilla extract, mixing until incorporated.
Using a spatula, stir in the oat/flour mixture, working in batches. Mix in ⅔ of the chocolate chips, setting the rest aside.
Spread a little more than half the batter in the prepared pan, using a spatula or your hands to fill the bottom of the pan. Dollop the Nutella on top of the batter and spread evenly. Add the remaining batter on top of the Nutella, spreading to cover. Sprinkle the rest of the chocolate chips on top
Bake for 25 to 30 minutes, until the center is firm and the edges are dark golden brown.
Remove the pan from the oven and let cool completely on a wire rack. When cool, invert the pan, and then invert again only a serving dish (right-side up). Slice into bars for serving.
